Hishiki's Story
Once upon a time, he was a professional wrestler. However, upset by losing continually, he lost it in the ring and killed an opponent. After that, Mr. Hishiki left the wrestling world to become a professional Bodyguard. He is much stronger and tougher than his career as a wrestler would suggest (!), and he's more difficult to get rid of than a cockroach. There is, apparently, a reason why he has the name "Undead".

Then, one day, he had the misfortune of taking a job that pitted him against GB. The "invincible" pair, of course, won. Eventually. Hishiki keeps coming back, though, each time stronger and madder than before. Of all the opponents Ban and Ginji have faced, Hishiki has the unique status as the only enemy the pair will go to whatever lengths necessary to *avoid* fighting.

SPOILERS (black on black, so just highlight to read)
Lessee… They've tried to drown him, burn him, toss him off a car at high speed… Ginji even called down a true lightening bolt on the guy, and he's still alive. Ginji had quite a one-on-one brawl with Hishiki in volume 4, and throughout the course of it Hishiki got more and more immune to Ginji's electricity. As of yet, Ban has only directly fought the guy once, and that was early on enough that the Jagan worked on him.

Nothing really clear is ever stated about Hishiki in the manga, but you really do have to wonder if he really is undead. What else could survive what GB has put him through?
